Ok, I have a confession to make. I love chocolate. I have tried and tried again to limit it, have it every other day but I cannot resist. I love it too much. I love it so much that when my dark chocolate stash runs out I make it.

Yup, I’ve resorted to making my own chocolate, probably part desperation, and part loving knowing what it going into my concoction. When all is said and done my chocolate is yummy, even my fiancé loves it and he can be pretty picky!

(makes about 5×1” chocolates)

1 tbsp coconut oil

2 tbsp raw cacao* (You can also use ½ carob if you are more sensitive to raw cacao)

Almonds (optional)

Honey or stevia to taste

*I used Navitas raw cacao powder

1. Gently melt the coconut oil (it is usually semi-solid at room temperature).

2.Add raw cacao and carob and stir in well until you have a toothpaste like consistency. If the mixture is too runny please add more cacao or carob.

3.Add sweetener of choice. I found that 1 drop of stevia worked well. I like my chcocolate dark!

3. Pour mixture into a mold. I used my heart shaped, bendable ice cube tray. (It makes popping the chocolates out easier).

4.Add almonds or other nuts to the chocolate in the mold.

5.Place in freezer for 15-20 minutes. ‘Pop’ out chocolates and serve!
