After recently doing a 3 day green juice fast I discovered how much I loved raw soups! This particular recipe was adapted from the alkaline sisters. It took all of 10 minutes to make! It was creamy and warm and perfect for a quick lunch that is delicious, filling and satisfying. Alkalinity never tasted so good!
Why is this soup so good for you?
First of all, most of the ingredients in this recipe create an alkaline environment in the body (except nutritional yeast which is slightly acidic). Our blood is slightly alkaline at a pH of 7.35-7.45. If this pH changes death will be inevitable so the body will do what it must to maintain an optimal blood pH. In order to do this the body will compromise other systems. If we consume too many acidic foods (eg. meat, processed foods, white flour, alcohol, coffee, etc.) the body will leach alkaline minerals from the bones (for example calcium). Over time this can lead to osteoporosis, gout (too much calcium in the blood) and diseases such as cancer. Diseases thrive in an acidic environment due to the lack of oxygen. A good rule of thumb is to consume 60-80% alkaline forming foods to maintain an alkaline internal environment.
Secondly, this soup is raw. Heating food over 40 degrees Celsius destroys the enzymes contained within the food. Enzymes are the life force of the food and allow the proper digestion of the food. If you do not digest your food well you cannot absorb the nutrients contained within it and you leave your body starving at a nutritional level. Raw Green Creamy Veggie Soup
Yield: 4 servings (it made 2 for my fiance and I, we have big appetites!)
1 small zucchini, chopped
2 stalks celery, chopped
2 cups raw spinach
1/4 cup fresh parsley
1/2 cup fresh cilantro OR basil
2 slices green pepper
1/8 cup raw onion, chopped
1 small clove garlic
1/4 cup nutritional yeast
Sea salt to taste
1 1/2 cups filtered water
juice of 1/2 to 1 lemon

1.Roughly chop all veggies and toss into blender. If you have a vitamix you can blend it for about 3-4 minutes to ‘heat’ it up gently*. It will be warm to the touch. If you have a regular blender or want a warmer soup add the blended soup to a saucepan and heat to your desired temperature.
2.Pour into bowls and serve!
