Today I am sharing this amazing truffle recipe! Mama and toddler approved. The main ingredient is the super sunflower seed. Sunflower seeds are an amazing seed full of vitamin E for skin heath and tons of plant protein.

My son is obsessed with cashew-date larabars. While they are good in a pinch (too many pinches) I want him to have more variety in his diet. These truffles are filling and taste amazing. A couple are great as an afternoon snack or post dinner dessert.

Sunflower Seeds – Nutritional Powerhouse

Sunflower seeds contain a high amount of vitamin E, a powerful antioxidant. In a quarter of a cup you can obtain 90% of your recommended daily intake of vitamin E.

Vitamin E helps promote heart health as it neutralizes free radicals that cause cellular damage. Vitamin E has also been shown to promote brain health and has anti-inflammatory effects. These anti-inflammatory effects have been shown to reduce asthma, osteoarthritis and rheumatoid arthritis among other inflammatory conditions.

Sunflower seeds also contain a significant amount of Magnesium. This mineral is needed for thousands of cellular processes in the body. In particular, magnesium is key for stress reduction, relaxation and the promotion of bowel movements (so so important!). Constipation can be detrimental to our health and beauty.

These seeds also contain healthy fat and are high in amino acids (the building blocks of protein). Fats and proteins are essential to a beautiful healthy body.

//Super Sunflower Seed Truffles//

Ingredients:

Please buy all ingredients organic if possible, Makes 1 serving

  • 1 cups of sunflower seeds (sprouted and dehydrated if possible)
  • 3 medjool dates
  • pinch of sea salt
  • 1/2 tsp coconut oil (melted)
  • 1/4 cup goji berries
  • 1 tbsp water

Directions:

  1. In a food processor process sunflower seeds to a rough flour consistency. If you process it too much it will turn into butter!
  2. Add in medjool dates and process until mixed well and has an even consistency.
  3. Add in sea salt, coconut oil and goji berries.
  4. Process until well mixed.
  5. Remove mixture and add in water to make a dough.
  6. Make 6 golf-ball sized truffles.
  7. Enjoy now or place in freezer to firm up!

I love these truffles and will be making more of them in the future. My son preferred them without goi berries even though he loves goji berries. Also shaping them like a bar made him not say ‘yuck’. Sometimes we need a tweak in shape or ingredients to get what we want.
