This cauliflower fried rice has been my comfort food lately. I find as the weather gets cooler I eat more of it. It really all started when I was pregnant and has become a staple in my life. I love using it as a side dish or topped onto salads. It really warms up your body with the ginger that is added and is also easy to digest.
Cauliflower: A Nutritional Powerhouse
Cauliflower is part of the cruciferous family of plants and is known to contain cancer fighting compounds that help reduce the risk of hormone dependent cancers such as breast cancer. The compound if you are curious is derived from the breakdown of glucobrassicin to indole – 3 -carbinol. I don’t like to isolate nutrients as they work synergistically in the body, but this one was special to note! Cauliflower also contains phytonutrients, antioxidants and fibre. Win win all around if you ask me.
On to the recipe. I LOVE this cauliflower fried rice and am surprised I haven’t turned into one. My son loves it too and it is quite versatile if you want to switch up the veggies.
//Comforting Cauliflower Fried Rice//
Ingredients:
Please buy all ingredients organic if possible, Makes 1 serving
- 2 cups of cauliflower
- 2-3 cremini mushrooms sliced (of 1/2 cup of zucchini or green peas – really any fried rice type veggie!)
- 1 sprig green onion chopped
- 1/2 inch grated ginger
- 1 clove grated garlic (optional, I usually ddon’t use it)
- sea salt to taste
- Bragg’s or Tamari
- 1 tsp coconut oil
Directions:
- Heat skillet on medium heat and add in coconut oil.
- Add sliced mushrooms (or whatever veggies) add a pinch of sea salt.
- Sauté veggies until golden brown (about 5 minutes)
- Add in chopped green onions and grated garlic (and grated garlic if oyu opt for it) and salute for 1-2 minutes.
- In a food processor add in chunks of cauliflower and pulse until a grain like size. I also use my vitamix blender to pulse the cauliflower.
- Add in cauliflower and sauté for 2-3 minutes adding in Bragg’s or Tamari to taste. .
- Enjoy!
